                                                                                                         Method

1. Mix sooji and curd, mix it properly so that there is no lumps in it add salt to taste .
2.Cover with lid and rest for 15-20 mins .
4. Heat oil in a pan/small kadai once the oil is heated add mustard seed and allow them to splutter you can also add asafoetida (hing) to it.
5. Add curry leaves and chana dal to it.
6. Shallow fry them for 10-12 seconds .
7. Check your batter and add water accordingly by checking the consitancy.
8. After that add the tadka mixture into batter.
9. Mix it well again and add eno or baking soda to it.
10. Grease little oil to Idli moulds.
11. Pour batter into idli moulds .
12. Place idli moulds into idli cooker.
13. Cover lid and cook for 10-15 mins.
14. Flame should be moderate high.
15. Open the lid after 10 mins.
16. Wet your figure with water and press on idli, if they come out clean without sticking to idlis that means idli are ready.
17. Allow them to cool slightly.
18. Remove them and serve them with chutney and sambar.

Spinach Cheese Momos

Method
1.      Take all purpose flour, salt and oil in a bowl and mix it add water in parts and make a firm dough.
2.      Cover the dough and keep it aside for some time
3.      Start with the stuffing. Wash spinach properly and blanch it and once blanched chop it.
4.      Heat oil in a pan add chopped garlic and once the garlic is cooked add chopped spinach cook it till spinach is dried. Once the spinach is cooked switch of the heat and add grated cheese to it.
5.      Start shaping the momos. Divide the dough in two parts. 
6.      Make a 6-7 inch log from each part. Cut it into equal part.
7.      Make ball of each part and let it rest.
8.      After 5 minute roll the ball into a thin circle of about 2-3 inch diameter.
9.      The edges should be thin and center thick.
10.  Apply water into the outer edge of circle.
11.  Put 1-2 tsp of stuffing in centre and give the desired shape.
12.  Grease a steamer pan with oil and arrange the momos.
13.  Steam them for 10-15 minutes till the outer cover is transparent.
14.  When you touch the momos it should not feel sticky.
15. Serve spinach momos hot with your choice of sauce.
