Pommes Marquises

Tomato puree

 Method

1.  Wash peel and rewash potatoes.
2.   Cover with salted cold water.
3.   Bring to boil.
4.   Drain off water, over and return to low heat to dry out.
5.   Pass through a potato masher.
6.  Add tomato puree. Mix well.
7.  Through a piping bag fitted with a grooved nozzle pipe rosettes.
8.  Set them in a hot oven for 2-3 minutes.
9.  Remove and brush over with beaten egg.
10. Return to oven cook till light brown.
