Method
1. Joint chicken
for all sautés.
2. Put butter in
a sauté pan over a fairly hot fire.
3. Season
chicken and place in the sauté pan breats, drumsticks.
4. Cook to
golden brown on both sides.
5. Cover with a
lid and cook in the oven till done.
6. Dress neatly
in an entree dish.
7. Add shallots
to sauté pan.
8. Add washed,
sliced mushrooms, cover with a lid and cook
gently without discolouring.
9. Drain off
fat.
10.Add jus-lie
and blanched and pipped tomatoes.
11. Simmer for 5
minutes, check for seasoning.
12. Pour over
chicken.
13. Sprinkle
with chopped parsley and serve hot.
