Pommes Parisienne

 Method

1.     Peel potatoes.  Use a melon ball tool to remove 1” balls from the potatoes and place the potato balls in a large bowl of cold water.
2.     Preheat the large sauté pan over medium high heat and melt the butter.
3.     Remove the potatoes from the water and dry carefully. Add to the pan and cook for 15 minutes.
4.     Toss the potatoes every few minutes to evenly brown all sides.
5.     Add the red pepper and parsley. Season with salt and pepper.
6.     Toss to coat and cook another 1-3 minutes.
7.     Taste for the seasoning and serve hot.
