Method
1. Combine
butter, parsley, thyme, oregano and
garlic in a bowl and mix well.
2. Slit
the chicken breasts and open them.
3. Fill
a piping bag with the butter mixture.
4. Sprinkle
some salt and pepper over the chicken Place the rolls on a plate and
refrigerate for 5 minutes.
5. Spread
refined flour and breadcrumbs on 2 different plates. Break eggs in a bowl and
whisk well.
6. Coat
chicken rolls with refined flour, dip in eggs and coat with breadcrumbs. Repeat
the process once more.
7. Heat
sufficient oil in a pan.
8. Gently
slide the rolls into the hot oil and deep fry till golden and crisp. Drain on
absorbent paper.
9. Serve
hot.
