Method
1. Season
cutlets. Dip in melted butter.
2. Sprinkle
over with breadcrumbs.
3. Grill
gently, basting from time to time.
4. Dish
in a circle. Pour charcutiere sauce over and serve a timbale of creamed
potatoes separately.
Charcutiere Sauce
1. Saute chopped
onion in butter without browning.
2. Add stock and
demi glace . Reduce to half.
3. Add mustard,
sugar and lime juice. Mixed Well.
4. Add chopped
gherkins.
