 Method

1.     Prepare Poultry veloute.
2.     Grind almonds to a very smooth paste,
3.     Rub through a strong cloth, twisting cloth to aid the process.
4.     Add almond milk to veloute. Re-heat.
5.     Finish with butter and garnish with diced chicken.
