 Method

1.     Make a pastry in the usual way using milk instead of water to make a richer pastry.
2.     Line a deep flan tin about 18 cm in diameter.
3.     Leaves for half an hour.
4.     Melt butter. Add onion and sauté without browning.
5.     Cut rind off bacon and dice. Fry bacon with onion just till bacon is cooked.
6.     Break eggs into a bowl and heat well. Add milk and cream.
7.     Stir in fried onions, bacon and grated cheese.
8.     Season with salt and pepper.
9.     Pour into lined flan tin and bake at 205 C for 25 minutes.
10.            Remove flan on to a hot plate. Serve at once.
11.            If flan is to be served cold, then garnish with sliced hard boiled eggs.
