Method
1. Select
large even size potatoes.
2. Wash,
peel and rewash.
3. Cut
into1.5cm slices.
4. Cut
slices into 1.5cm strips.
5. Cut
strips into1.5cm dice.
6. Wash
well and dry in a cloth.
7. Cook
in a frying basket without colouring in moderately hot fat.
8. Drain
and place on kitchen paper in trays till required.
9. When
required place in a frying basket and cook in hot fat till crisp and golden.
10. Drain well. Season with
salt. Serve hot.
