Croquette Potatoes

 Method

1.  Wash peel and rewash potatoes.
2.   Cover with salted cold water.
3.   Bring to boil.
4.   Drain off water, over and return to low heat to dry out.
5.   Pass through a potato masher.   
6.   Mould into cylinders.
7.  Roll in flour. Brush with beaten egg. Roll in breadcrumbs.
8.  Deep fry in deep fat till golden brown.
9.  Drain on absorbent paper and serve hot.
