 Method

1.     Wash and break cauliflower into florets. Keep a few for garnish
2.     Wash and slice leeks. Peel and chop onion.
3.     Put cauliflower, leeks and onions into a pan with half the milk.
4.     Cook till tender. Pass  through a sieve.
5.     Prepare a white sauce with flour, butter  and remaining milk.
6.     Add sauce to puree of vegetables. Add seasoning. Return to heat and bring to boil.
7.     Remove. Add cream gradually. Serve hot, garnished with florets of cauliflower boiled in salt water.
