Epinards au Gratin

 Method

1.     Remove stems.
2.     Wash very carefully in plenty of  water.
3.     Cook in boiling salted water until tender for approximately 5minutes.
4.     Refresh under cold water, squeeze dry into a ball.
5.     After refreshing , dry over a hot flame with water.
6.     Place on a butterd gratin dish.
7.     Sprinkle with cheese and place under grill to form a gratin.
